Looks like you've developed something really cool. I am just not that detailed about my ammo inventory.
I write the purchase date on the boxes of ammo (habit I developed with my shotgun shells) and then stack them by caliber. It makes taking inventory pretty simple (when dealing in ballpark figures).

I think it's cool, but before I'd buy a spreadsheet id just buy the app. There is one that does a very similar thing as others have mentioned. I myself just keep a basic notepad doc on my phone with counts. It works for my limited cache.

My inventory of ammo has too few parameters to require this.
For my rocket motors, however, I'd create my own MS Access database.
Keep on working on your system. Developing something like this can be fun. I've fed my children for decades by teaching people to do this kind of thing. I have and Excel workbook system that works with an Access database and Word mail merge to support my model rocket competition hobby. I started the system in 1997.
Working on an effort of this type can help keep your mind sharp.

Are there any sort of organized model rocket events in Elgin? I like to eat at Morelia's but it's a long way without another reason for going.

I would have purchased this at one time. It's a very good thing to have. I've been tracking ammo and food storage by spreadsheet for many years and the only thing that continues to grow is my ammo.
Mine is not elaborate. The ammo count "in storage" is to the round. Daily use stuff is not counted. I was tracking all ammo to the round at first and it got really crazy with the counting so I removed around 1k rounds of different calibers for daily use and keep it separate from inventoried ammo. Daily use stuff is loaded in rifles, revolvers, magazines, plinking boxes and set aside for use.
It has become less regimented and more relaxed in my life with daily use ammo. I no longer have to boot up my laptop when I hear a gunshot.

Tam, for $5.00 it would be worth checking it out and see how it would fit into my inventory system which currently is a basic Excel spreadsheet. I would want it to be in Excel though as that is what I am comfortable with and do not want to have to learn a new program.
It seems that you have many more variables which could prove beneficial without having to do them myself, the idea of being able to modify it is a plus so I could add a page of reloading components that I typically use.
A mobile app would be good although I would want it to be able to sync with my PC which is where I keep all of my data. I imagine that this scenario would be a major headache to try to code and get right.

I voted no. I don't inventory my groceries, toilet paper, and other consumables. Nothing against other people tracking things like that on a spreadsheet if it makes them happy. It's just not for me.

I can see merit in the idea. It's pretty easy to drive a mile or less and have ample supplies of TP and other things readily available at reasonable pricing. There's no need to worry about how much is on hand or estimate when more might be desired. Ammo and reloading components are probably much farther away, much less plentiful, much more costly and overall more important to know and track at a reliable level. It seems like an excellent idea to me. I may get one just to have it and examine it. I only do 3 calibers so mine is mentally trackable, at least at this point. Time and/or more calibers may change that.
It's fine if you disagree. I can't force you to be correct.

Without being unkind, I have to say no, as it seems a bit 'obsessive compulsive' for my taste.
Plus, keeping up with the ongoing addition and subtraction would be a lot of work, at least for me.
