The SA Zoo is owned by the city so they cannot legally post it and you may legally carry. Just be aware that some city owned zoos (such as Dallas Zoo) post 30.06 anyway. So, if caught carrying, you will most likely beat the rap but not the ride. That being said, I always carry at the Dallas Zoo.

I've carried there several times. Just remember concealed is concealed and you should be fine. For what it's worth I don't remember any 30.06 signs either.
