But, it's harder to find sushi-quality salmon since it's shipped refrigerated, not frozen. Asian groceries (H-Mart is awesome) have lots of fish (some of it still swimming) I'd eat uncooked. When I cook salmon at home, I only cook it to a point where the middle is warm, but still raw-colored. I find salmon that's been cooked through to be inedible.
Love carpaccio and tartare (even had it at a trade show in Germany...not something I’d do in the USA!!).

Re: Ever Eaten Raw Beef?
Growing up, for me there wasn't a sharp line between livestock and pets. Chickens rabbits steer could serve both roles. Sometimes we would trade the animals we raised so we weren't eating the same animals we raised.

Bitter, I think that Los Angeles had a law allowing Vietnamese to eat dog, not sure if they still have it. When I was in the Air Force there was a big scandal about the commissary selling horse meat. They called it some kind of a French name to disguise it but it was horse meat.Bitter Clinger wrote: ↑Thu Nov 22, 2018 10:00 amIn the US we don't eat domesticated animals and pets, at least not yet. I never had any horse, camel, or Bison meat. However, I will never eat dogs, cats, or any kind of lizard or rodents

Would alligator qualify as a big lizard?
I've eaten it.
Cooked and very, very good.
Hmmm, frogs and turtles too though none eaten raw.
These are critters best cooked.

You can eat pretty much everything in China.
I need to track down some old photos of some business dinners in Guangdong.

Don't get me wrong. I love lamb but you are right, a lot of what we get is very gamey and not as good.Beiruty wrote: ↑Wed Nov 21, 2018 12:32 pmMaxwell,Maxwell wrote: ↑Wed Nov 21, 2018 9:07 amI would not have expected that with lamb! As far as beef goes I like my steaks very rare and I've had Steak Tartare on several occasions.Beiruty wrote: ↑Sun Nov 18, 2018 4:20 pm In Lebanon we have a special dish of raw meat (usually lamb ribeye). It is pounded in a carved rock. Then, seasoned with non-hot spices and some Mentha longifolia (horse mint), called Habak in Lebanon.
It is made immediately after the animal is slaughtered. Usually, the early morning of a Holiday.

I am certain, you can use beef (less fat) as well as lamb. The standard is the most tender red meat available. For some breed of lambs, its meat has gamey smell other do not.

The Manor House (a restaurant on the grounds of the Houston) has a beef tartar appetizer that is delicious! They serve it with some spicy Aoli and it tastes great. I usually follow it up with their Steak Diane - it's mighty tasty as well.

Had wafer thin slices of raw horse at a market in Barcelona. It was pretty good.
