Road Trip to NM and CO

Hi Everyone,
I'm planning a road trip through NM and CO. I read what I can about CHL for each state, but I was wondering if anyone knew of any gotchas or anything I need to be aware of.

Don't know of any for NM, as we drove pretty much straight through, only stopping for gas.
Colorado has open carry, but it seems most people don't, and a couple cities get real excited about it. I believe Denver even passed a law making open carry illegal that somehow trumps the state law.
IANAL, and I'm sure others will chime in.

Unless NM law has changed, you're only allowed to conceal one pistol with a CHL.
I know that's all most people do, but it could be a trip up for some Texans since there is no such limit on us.

You have to open carry the other handguns in NM.
