My Google-Fu has failed me. I will be moving to Nevada in a month or so, and since NV does not honor Texas' permit, I would like to look into obtaining a Utah permit so that I minimize the time I will have to go without a CHL once I move back to Nevada. Any suggestions on instructors in the San Antonio area who can facilitate this?

I would consider a Florida non-resident license instead:

You can complete the entire application process by mail, without having to take another class. I believe your Texas CHL certificate should suffice for proof of firearms training but you'll want to double check the application. Florida licenses are also valid for 7 years and do not require taking a "refresher" class before the license can be renewed... all it takes is another application and fresh set of prints.
The only drawback is that Florida is backlogged with about 90,000 applications, so it will take AT LEAST 90 days (up to 140 for some people; mine took 120) before your license is issued. You'd probably want to get started right away if you're moving in just one month.

It's been awhile since I last looked at a Florida CHL packet, but can you send in prints through the mail from Texas?
When I looked, the way I read it was that I needed to visit a local Florida LEO to have my prints made, even for the non-resident version. But if I can have prints made here and send them in, I might add this to my renewal checklist.

Yep - they'll send you a fingerprint card, which you can fill out anywhere. The application is a bit confusing because it recommends that you be electronically fingerprinted at a Florida Sheriff's station, but this is not a requirement.

Ah ... that helps bring back my memories. You're right, it was the recommendation for being electronically fingerprinted that had me thinking I needed to pay the state a visit in order to complete.
