You will not be able to distinguish any difference between the two manufacturers.
Accuracy will be determined by how well the gunsmith fits the barrel, slide,
link, and bushing.
In San Antonio I suggest Alex Hamilton who built the Series 80 Colt that I carry.

Most aftermarket barrels are going to be quite accurate.
Personally, I would go with a Briley barrel and their spherical bushing.

TxD is right - it depends more on the fitting by the gunsmith.
However, Bar-sto makes the barrels that all others are compared to. I would have no hesitation to use any of the following barrels in a 1911:
# Bar-sto
# Kart
# Wilson
# Ed Brown
# ParaOrdnance (now known as ParaUSA)
# STI
# Nowlin
The important thing is to get a barrel with the proper ramp style.
