I'm thinking about doing a trade with someone and was wondering what the proper procedure is for trading or selling one of your pistols, as far as paperwork, ownership transfer, etc.

Follow the law, that is all that is required. The law says you can't knowingly sell to a person who should not own a firearm. It does not say you must fill out any paperwork or go through a ffl, so no need to. Can you ask for a bill of sale? Sure, should you? Well, that's up to you.
