Is there a range that uses the type of real life scenarios like police officers use? (you know the bad guy holding woman hostage, baby stroller type of thing)

The short answer to your question is yes. If you can find a local range that hosts an IDPA club, you can join and get this kind of shooting on a regular basis. Let us know where you are located and we'll see if there is an IDPA club close.

There are at least three great IDPA clubs in the Dallas area. If you go to http://www.idpa.com and go to the "Club Information" section, you can drill down to the link to each individual club.

A number of members of this forum are associated with those clubs so I expect they will weigh in with their comments.

I strongly recommend you try IDPA. It is a great game and helps you develop some great gun-handling skills.
