That is the most beautifully marbled slabs of beef (in the hangiri) I've seen in a long time :O!!! I take it it's Kobe/wagyu? Dang... And I mean... Dang.

If I'm not mistaken shellfish actually falls into a class of food items called "makru". Not too shabby! I've "made" sushi a few times myself. Are you using a single edge knife? Anyone got a source for good fish? The best fish I've found in the area is unfortunately accompanied by the biggest jerk in the area as well.
