We don't travel much but we recently spent a weekend in Fredericksburg (west of SAT). Plenty of historic places to see, nice churches, wineries, breweries, museums, gardens, restaurants etc. All wheelchair accessible, btw. The place lives off tourists, mainly city people from nearby Austin.
Gotta warn you, though, the "German" food isn't really authentic, it has been understandably Americanized over the decades.

Not many 06 or 07 places, most wineries have fake 51% signs so do your homework.
All in all the food is still pretty good in Fredricksburg.
a side trip to the LBJ Ranch is very interesting. The WW2 Naval museum is well worth the trip. You don't have to climb Enchamted Rock to appreciate it.

Good suggestion about New Orleans, The plantations are pretty neat to tour. If going to New Orleans check Sculpture Garden. I'm not much into art and culture but found it interesting. Very accessible.
