I ride everyday, and it can be tricky to carry depending on a number of things. When I am riding to work, I just use an IWB holster for a full-size pistol. A regular heavy jacket covers great and I am not traveling very far. The thing to worry about is a crash.
If you are going to tour, you have to think about long term comfort, safety, access and concealment. Shoulder holsters are great for concealment and comfort, but could pose a threat to you in an unintended dismount. A tank bag is the safest way to carry. I don't worry too much about a slow draw, as you can't shoot while riding anyway. What's more, between taking off your gloves, and unzipping your jacket, you are going to be a slow draw. A tank bag might actually be faster to access. You might want to practice accessing your gun with all your riding gear on. It is a lot slower than under different circumstances.
Where a tank bag can be a hassle is if you are doing a lot of stopping and starting. If you are getting off the bike every hour or so, you have to keep taking the bag with you. That can be a headache. Normally when I tour, I am heading for a destination and only stop for fuel. The tank bag works great because I don't leave the bike until I have arrived to where I am going. My advice is look to carry off your body in a secure bag of some sort. I hope you have a great trip. Nothing is better than packing the bike up for a cross country sprint!
