BIg Slough Wilderness Area near Weches should offer some good opportunities and it's not too terribly far from DFW. Big Slough is large enough to have just about any critter you can legally hunt in East Texas and the deer population is good. I've heard Alabama Creek is good, but can't speak from experience.

A word to the wise, check regs and get the necessary licenses/permits. All USFS lands are pretty regularly patrolled by TPWD Game Wardens and USFS Law Enforcement. I'm just saying the regs are a bit site specific and you could find yourself in violation when you had no idea you were breaking a rule. Roads generally get pretty bad in wet weath also.
