Fredericksburg is a mecca for yuppie/city type trinket shoppers (my wife used to manage to get me to take her 2-3 times per year), but there is a few real pearls there if you look. The number one thing is the Nimitz Museum....it's worth two days, both the indoor and outdoor museum. The George Bush (sr) museum wasa still being completed the last time I was there, but it too had some really interesting things. And, the Fredericksburg Brewery Restruant (quisine similar to Appleby's) is worth a visit - particularly if you like brewpub or micro-brewed adult beverages. My fisrt visit there was what inspired me to start home brewing. Also, a little side trip to "Enchanted Rock" should be of interest. One of the most famous Texas Ranger firearms "tests" was made there (revolvers were involved ;-) ). A whole lot of very interesting history, particularly early German settler history.

And there are more trinket stores than you will want to be dragged through..that's life.

(oh, and considering the tourist influence and origin of most of the city shop keepers, I wouldn't expet to find a whole lot of gun shop activities)
