The summary is something we've discussed on the forum many times:
You might beat the charge, but you could take the ride.
It's a sad state of affairs as I believe the law is written very clearly, but each person needs to do their own calculation of the "cost" of being right vs. the risk of not carrying. We reserve the right to be right and broke at the same time. This shouldn't be the decision we're left with, but it is.
In other words: are you willing to be the test case. For gun shows, I'm not, mainly because they have off duty LEOs enforcing the unenforceable sign. I just email the guy every time and tell him he's an idiot, then keep my money away from his show.
For the Stock Show, not only am I right in carrying, but there's less risk of being found out and being the test case if you stay properly concealed.

I'll restate my experience:
1. The area is owned by the City of Fort Worth, so even if it is posted, it is not technically enforceable according to the way the law reads. There have been no test cases of this to my knowledge, so opinions on the risk / reward of carrying past these types of signs seem vary by the individual.
2. I went in the door by the Texas Room exhibit hall where the gun shows normally are. I went out of my way to look for 30.06 signs on the doors, near the ticket-taker, and on the island of signs on the concrete entryway. We already had tickets, so I didn't have to go up to the ticket booth, but if they had one, it would not have been compliant unless it was inside the booth on the back or side wall.
3. We did not attend a professional rodeo while there.
4. There were no metal detectors and they did not search our bags.
5. The competitors with livestock on display drive in another entrance altogether, and I can guarantee you there are dozens upon dozens of concealed carry firearms among their ranks.
6. A fun and safe time was had by all.

This was my first time to visit in years. I remember threads in recent years here about the gun-show style unenforceable 30.06 signs at the entrances, but I walked all around looking for one this year and they weren't to be found. I likewise did not attend the rodeo (professional sporting event), but had a blast watching them action off some bulls.
As far as schools It'd be like a zoo - if you're with a school group, you're at a school event. If you're not, you're not. We were with our homeschool group. . . also known as our family. :)
