My situation is almost identical to yours. But, since I carry everywhere I can (even at home) she doesn't even say anything anymore. She just expects me to carry all the time. Now, when we are somewhere that doesn't feel quite right to her, she does ask if I'm armed, to which I always say...yep. Even at home, when she sees something suspicious outside, she confirms that I'm armed. She is also not anti gun. Her father has guns. SHe grew up in a household that hunts and has gone hunting with me.
I just think that she has lead a sheltered life and has never HAD to think about personal security. I like some of the ideas above and will try some.
To the OP, give it time...hopefully she'll get used to the idea and begin to expect it.
