If there is a lesson to be learned:
Don't ask wait staff, asst managers, managers, area managers, district managers, or anyone else short of corporate. There's also a great likelihood of corporate staff being uninformed.
When I contacted Chili's corporate in 2003 about this issue, Bill Heinie, then Corporate Head of Security was the only person informed about proper signage.
Any answer you get from anyone else will be useless and usually wrong. They're going to give you the safe (for them), expedient answer, NO GUNS, that carries no liability for them or their jobs and that allows them to immediately get back to servicing their customers.

Premises" means a building or a portion of a building. The term does not include any public or private driveway, street, sidewalk or walkway, parking lot, parking garage, or other parking area.
Amusement parks, only in county of 1 million plus population, 75 acres, other stipulations.
Amusement park" means a permanent indoor or outdoor facility or park where amusement rides are available for use by the public that is located in a county with a population of more than one million, encompasses at least 75 acres in surface area, is enclosed with access only through controlled entries, is open for operation more than 120 days in each calendar year, and has security guards on the premises at all times.

My interaction was with Bill Heine, then Director of Security for Chili's.
That was in June 2003. I was trying to get a definitive answer on Chili's policy.
That came about because I hadn't eaten at Chili's for 7 years because Chili's DID post in 1996 in the pre-30.06 days. Back then there were a lot of knee-jerk postings as everyone believed the 'blood in the streets' hype.
I never knew when Chili's changed their policy, since I never ate there.
But by 2003, Mr. Heine assured me that Chili's did not post against CHL and that the only proper sign should be the 'unlicensed possession' one.
I have found that to be true in every Chili's I have eaten in since.
To get my business back, Mr. Heine sent me ten $10 gift certicates to use at Chili's.
Chili's is not a business we have to worry about.
