On Superbowl Sunday, at the BBQ Block Party organized by the Houston BBQ Festival at Saint Arnold Brewing Company, Wayne Mueller and the incandescent brisket and beef ribs from his family’s Louie Mueller barbecue in Taylor were the featured attractions. Six hundred tickets were sold, and as the event wound down, Wayne Mueller told me he was actively looking for a location in Houston.
I am looking forward to him opening up a store in Houston.

Re: Best BBQ Joints in TX
It may be the part of the brisket it comes from, one end has the fat and a different grain, but I never totally understood the "moist" brisket thing either. To me it is like asking if you want a juicy tender steak or a dried out tough steak.J.R.@A&M wrote:In the mid 1980s there was a place in Taylor called Louie Mueller's. They specialized in "moist" brisket -- I guess as opposed to dried out brisket. Anyway, it was pretty good. And if the old fella behind the counter was in a good mood, he would toss a piece of burnt fat onto your plate just for good measure. Those burnt fat morsels probably lowered my life expectancy, but dang they were tasty.

I only recommend it if you are stuck in California and get homesick for good Texas BBQ.A-R wrote:If you're touting "good barbecue" in Kalifornia, I think the Texas Rangers can run you out of the state for such transgressions. It's one thing to prefer Deep South pulled pork over Texas brisket (a matter of taste), but to actually enjoy BBQ from a communist state is akin to treason.

Good luck. I have heard that these work great in the winter, but when hot weather comes you may have some issues.RoyGBiv wrote:I finally broke down and picked up an electric smoker a few weeks ago. Saw one at Lowes I'd had my eye on, and then found it on clearance so I bought 3... Kept my fingers crossed that some buddies would want one..... Been smoking all kinds of stuff the past few weekends.. It's just soooooo easy when you can digitally control the temperature... it's almost cheating...
... This thing looks like a 5 cubic foot dorm fridge... Works very well.
I hate to tell you this, but they use red food coloring.RoyGBiv wrote:... it was almost as red as Chinese BBQ ribs.![]()

I plan on trying them out. Free ice cream and good bread won't sway my review of the main course.puma guy wrote:I assume the Brisket House you refer to is different. I will give them a try when I'm out that way. I did enjoy the free ice cream and they have very good bread.
