Can't carry TWO guns
I don't ever plan to carry two side arms but I heard recently that 40 states will not allow you to carry two pistols as a civi. I'm from NC, it was allowed there and I believe it is here. Any information on this? 40 seems like a ridiculous number.

As long as you have a Tx LTC or License valid in Texas, Texas state law does not address the number of firearms you are allowed to carry.

In California, we had to list the pistols on our permit by make, model and serial number, and qualify with each one, even if they were identical.
If you had two identical pistols, one listed on your permit and the other not, it was a felony to carry the unlisted one.
You could list up to 3, although I'm not sure this was a state requirement or merely a superstition of the San Diego Sheriff. Thus, you could carry only 3 max.
These policies were dreamed up by a group of swarthy, balding comedy writers working in a dingy office in Santa Monica, the same group who made up airline ticket pricing schedules.

Texas allows as many as you can conceal.
I'd like to repeat an old anecdote that was written up here on the board:
In the earlier days of Texas CHL's, a Fort Worth LEO stopped a man, then
called supervisors for some guidance: "how many can handguns are allowed?".
Answer : Unlimited, as long as they are concealed.
The man he was asking about had SEVEN handguns on him. All were concealed,
so he was free to go.

In Texas, you can carry an AR, a PSR, 1 sidearm, and BUG all at the sometime. However, sorry, no RPG-7 for you.

I usually try to limit it to 4 handguns max on my person, plus another 2-3 in my car. But I'm pretty sure you can carry as many as you want.
A limit of one would require an extremely reliable gun along with a significant number of extra mags.

Oklahoma is limited to .45 caliber or smaller, but I saw nothing about being limited to one handgun.
