Stock show, no.
Rodeo, yes: it's a professional sporting event.
(This is an assumption on my part; I don't know the details of this rodeo, but if there is prize money paid, it's professional.)

Do a search for "rodeo." This comes up frequently regarding several different rodeos. Consensus is that they aren't posted (and any posting would likely be invalid as they are usually held on government-owned property) but that carry at the rodeo itself is not allowed under the professional sporting event clause of §46.035.

I did not notice any postings when I went in on Sunday, at least to the grounds. I have to point out that i was not really looking either, though. There were various postings around the AT&T center, which is where the rodeo itself is held. This is also fenced off separately from the rest of the grounds.
There was one sign that did catch my eye. While I was walking around the market area inside the Freeman Colisseum, I saw that one of the permanent vendors was selling soft pretzels. When I went over there, they also had a 51% sign behind the counter. I had to explain to my wife and kids why I was laughing at it (it is highly unlikely that even this one vendor makes that much from the beer, with all of the rest of the food and drinks it sells). They did have a license posted but it was too far away for me to be able to read if it said red or blue for the sign.

I was there on Sunday. I entered at the Stock Show (not AT&T Center) Main Gate and went to straight to the ticket booth and didn't see anything.
However, when later exiting the Main Gate on the far left hand side (when entering), I saw what maybe a 30.06 sign in red and white. Not sure though as I only had a glance at it and I was with a group so I couldn't get a good look.

I wound up going and it was posted 30.06 - had to run back to the car and lock things up.
Fortunately the kids were in a good mood and I got a good parking space.
