I would highly recommend having a gunsmith replace your safety since you are new to 1911. File off a hair too much metal and your safety may not work reliably or at all.
Yup find a good 1911 smith in your area and have them do it.
Harrison , Ed brown and Wilson combat are several of the bigger brands to look at.

If you're going to start replacing things I'd suggest a beaver tail grip safety as well while its at a smith but put a bunch of rounds though it first before upgrading parts

Yes but don't expect to be able to simply drop in upgrade parts as they often need fitting (thum safety, grip safety, trigger, etc) magazines should be interchangeable though some pistols prefer certain magazines but I've had perfect luck with Wilson combat mags.
Buy quality magazines and you'll be fine

Springfield 1911-A1 Mil-Spec .45 ACP 5 Inch $679
Remington 1911 R1 45ACP 5" 7+1 Double $665
Remington 96336 1911 R1 Commander 45ACP $665
Rock Island Armory 1911 Tactical .45ACP 8 Round $610
Thoughts?
I've heard enough bad things about the Remington to stay away from those
If you don't want a beaver tail then go milspec Springfield
Otherwise the rock island tactical is solid, but honestly I'd watch out for a sale in a range officer.
Grabagun has the 9mm range officers for roughly 705 usually with the .45 being a bit more

Re: 1911 suggestions in $500-$700 range??

In the roughly 700 range I'd recommend the Springfield range officer all day long
Want to spend less than that the the ria is a great bargain, I've got a 9mm tactical that is solid and tighter than my ruger
