I need to back up for a moment. I was looking for and found the law pertaining to the 51% sign and this is what it says:
§ 411.204. NOTICE REQUIRED ON CERTAIN PREMISES. (a) A
business that has a permit or license issued under Chapter 25, 28,
32, 69, or 74, Alcoholic Beverage Code, and that derives 51 percent
or more of its income from the sale of alcoholic beverages for
on-premises consumption as determined by the Texas Alcoholic
Beverage Commission under Section 104.06, Alcoholic Beverage Code,
shall prominently display at each entrance to the business premises
a sign that complies with the requirements of Subsection (c).
(b) A hospital licensed under Chapter 241, Health and Safety
Code, or a nursing home licensed under Chapter 242, Health and
Safety Code, shall prominently display at each entrance to the
hospital or nursing home, as appropriate, a sign that complies with
the requirements of Subsection (c) other than the requirement that
the sign include on its face the number "51".

(c) The sign required under Subsections (a) and (b) must
give notice in both English and Spanish that it is unlawful for a
person licensed under this subchapter to carry a handgun on the
premises. The sign must appear in contrasting colors with block
letters at least one inch in height and must include on its face the
number "51" printed in solid red at least five inches in height.
The sign shall be displayed in a conspicuous manner clearly visible
to the public.

(d) A business that has a permit or license issued under the
Alcoholic Beverage Code and that is not required to display a sign
under this section may be required to display a sign under Section
11.041 or 61.11, Alcoholic Beverage Code.
(e) This section does not apply to a business that has a food
and beverage certificate issued under the Alcoholic Beverage Code.


So apparently a hospital can have a 51% sign and it doesn't even have to have "51%" on it at all. Man thats confusing. But section C, stating the sign requirements, still must be met(less the "51%" requirement that hospitals don't need). So it still must be in a conspicuous place, clearly visible, hung at ALL entrances, and meet the size and language requirements. Thats still a lot for them to comply with, but now at least you know what to look for.

So, as I said earlier, if it's not a legit "51%" sign or a 30.06 sign, your free to pass ;-)

Personal note: I just love the law, and hate it with a passion at the same time. I wish I could just cram all of it in my head like in The Matix. That would save me a ton of reading. Could you even imagine trying to find the answer to these kinds of things without the Internet?

It may not be 100% "properly" posted, but I will not take a chance at somehow getting caught and have everything I worked so hard for go down the drain.
What if a loved one is shot in a resturant robbery that you could have prevented, but you spotted a tiny, English only version of the 30.06 sign hidden behind the entrance foilage. All your hard work...has just gone down the drain.

Non-compliance is non-compliance. As my CHL instructor told me, the only two signs I have to worry about are the 51% sign(and it better be legit) and the 30.06 sign (and it better be perfect). All others can simply be ignored as if they don't exist. Your CHL gives you the ability that other "non-carriers" don't have; to disregard "gunbuster" signs and "illegal firearm possesion" signs.

Let the law work for you. It is strictly defined in the Texas Penal Code as to how the 30.06 sign MUST be. If the poster of a 30.06 sign doesn't follow the letter of the law, and you do, how can it negatively affect you? Carry proud and carry often, and don't be ashamed of your right to carry a weapon. You deserve it.
